Spiced Apple Raisin Compote


YIELD: 2 cups of compote


INGREDIENTS

  • 1.5 lbs apples, peeled, cored, and finely chopped

  • 1 Tbsp brown sugar

  • ¼ cup raisins

  • ¾ tsp cinnamon

  • ½ cup water + ¼ cup (optional)

  • ½ cup water + 1 Tbsp cornstarch, mixed well


DIRECTIONS

  1. Prepare the apples.

  2. Add apples, brown sugar, raisins, cinnamon and ½ cup water to a pan.

  3. Cook on medium-high heat with lid on. Stir occasionally.

  4. After 6-8 minutes, remove lid and continue cooking until the water evaporates.

  5. Add ¼ cup water and cook longer if necessary to get apples to turn golden and soften.

  6. Once the apples are a good texture and color, raise heat, remove lid and add the ½ cup water and corn starch all at once and stir until thick.

  7. Remove from the heat and serve.


Try this recipe out with our whole wheat banana pancakes or oatmeal pancakes!
