YIELD: 2 cups of compote
INGREDIENTS
1.5 lbs apples, peeled, cored, and finely chopped
1 Tbsp brown sugar
¼ cup raisins
¾ tsp cinnamon
½ cup water + ¼ cup (optional)
½ cup water + 1 Tbsp cornstarch, mixed well
DIRECTIONS
Prepare the apples.
Add apples, brown sugar, raisins, cinnamon and ½ cup water to a pan.
Cook on medium-high heat with lid on. Stir occasionally.
After 6-8 minutes, remove lid and continue cooking until the water evaporates.
Add ¼ cup water and cook longer if necessary to get apples to turn golden and soften.
Once the apples are a good texture and color, raise heat, remove lid and add the ½ cup water and corn starch all at once and stir until thick.
Remove from the heat and serve.
