Simple Chopped Salad


SERVES: 10 as a side salad


INGREDIENTS


Salad Ingredients

  • 12 oz. of Romaine lettuce, chopped into ½ inch pieces

  • ½ pint of cherry tomatoes, chopped in half or quarters

  • 1 small cucumber, peeled, seeded, and cubed (optional)

  • 4 oz. Parmesan, finely shredded

  • 3 Tbsp fresh basil (or 1 tsp dry), cut into thin ribbons

  • 2 Tbsp fresh parsley (or 1 tsp dry), minced

  • ¼ cup salted sunflower seeds


Dressing Ingredients

  • 2 Tbsp balsamic vinegar

  • 2 pinches of sugar

  • ½ tsp kosher salt

  • ¼ tsp black pepper

  • 3 Tablespoons olive oil


DIRECTIONS

  1. Make Dressing:

    1. Whisk together balsamic vinegar, salt, pepper, and sugar in a large bowl.

    2. Very slowly drizzle in oil while continuously whisking.

  2. Add prepared salad ingredients to a bowl and gently toss with dressing.
