YIELD: 1 ½ cups
INGREDIENTS
2 teaspoons sugar, maple syrup, or honey
2 limes, juiced
1 ½ cup radishes, thinly sliced into half moons
1 jalapeño, seeded (optional), thinly sliced into half moons
3 green onions, minced
¼ - ½ cup cilantro, minced
DIRECTIONS
In a medium bowl, mix sugar and lime juice. Add radishes, jalapeño, green onion, and cilantro.
Mix until the slaw is evenly coated and let it rest for about 5 minutes.
Serve on top of your Lentil Tacos or add on top of your favorite veggie bowls, sandwiches, or eat plain.
