SERVES: 2-3
INGREDIENTS
2 Tbsp oil
3 green onions (white part), finely chopped
½ tsp cumin
½ tsp garlic powder
¼ tsp cinnamon
1/8-¼ tsp cayenne pepper
½ cup dry brown lentils
1 cup instant brown rice
2 cups chicken or vegetable broth
Carrot Slaw Ingredients
2 medium carrots, peeled and grated or peeled (into ribbons) and finely chopped
3 green onion (green part), finely chopped
2 Tbsp cilantro, finely chopped
½ lemon, juiced
½ tsp cumin
Salt & pepper to taste
Garnish
Greek yogurt
Lemon wedges
DIRECTIONS
Heat oil in a medium pot on medium high. Sauté white parts of green onions –about 1 minute. Add spice and sauce for another 30 seconds or until spices are fragrant.
Add lentils and broth, cover pot. Bring to a boil and then simmer for 10 minutes. Make Carrot Slaw while the lentils cook.
Carrot slaw: Add all prepared ingredients into a bowl and mix thoroughly. Let it chill in the refrigerator until needed.
Add rice to the pot, stir, cover, and simmer for another 10 minutes or until water has fully evaporated. Take off heat.
Serve lentils and rice warm. Add Carrot Slaw and garnish on top if desired.
