Greek Spinach Dip


SERVES: 6


INGREDIENTS

  • 2-3 Tbsp canola oil

  • ¼ cup red onion, finely chopped

  • 3 green onions, minced

  • 2 garlic cloves, minced

  • 1 ½ cups spinach, minced

  • ½ cup Greek yogurt

  • 1 Tbsp mayonnaise

  • ½ lemon, zested & juiced

  • ½ tsp kosher salt

  • ¼ tsp black pepper

  • 2-4 oz. feta cheese, crumbled

  • 2 Tbsp fresh dill, minced


Garnish

· 1 Tbsp parsley, minced

· 1-2 Tbsp olive oil, drizzled



DIRECTIONS

  1. Heat oil in a large skillet on medium heat. Sauté red onion, green onion, and garlic for about 1 minute. Add spinach and cook until wilted, about 2-3 minutes. Take off heat and set aside.

  2. In a large bowl, mix Greek yogurt, mayonnaise, lemon zest & juice, salt, pepper, feta cheese, and dill.

  3. Add spinach and onion mixture to the large bowl and mix thoroughly. Taste and adjust for seasoning.

  4. Garnish if desired and serve with vegetables, crackers, or pita bread.
