Garlic Scape Dip


Serves: 6-8 as a side dish


INGREDIENTS

  • 1 Tbsp olive oil

  • 1 cup chopped garlic scapes

  • 1/2 cup nonfat plain greek yogurt

  • 1/2 tsp white wine vinegar or lemon

  • 1 tsp salt

  • 1 tsp black pepper

  • 1/2 tsp smoked paprika

  • 1 tsp chili pepper


DIRECTIONS

  1. Add olive oil and chopped garlic scapes to a medium-sized skillet on medium high heat.

  2. Cook down scapes until soft, about 6-10 minutes. Once softened, remove form heat and set aside.

  3. Add greek yogurt, white wine vinegar and spices. Combine and serve!
