INGREDIENTS
3 Tbps canola oil
About 2 cups sweet corn, (if canned, drain & rinse)
½ cup plain Greek yogurt or sour cream
1 lime, zested & juiced
1 large garlic clove, grated or minced
¼ tsp cumin
¼ tsp chili powder
¼ tsp cayenne pepper
1 medium poblano pepper, seeded & finely chopped
3 green onions OR ½ medium red onion, finely chopped
¼ cup cilantro, minced
¼- ½ cup (2-4 oz.) cotija cheese or feta, crumbled
DIRECTIONS
Heat oil in a large skillet on medium-high heat. Add corn and sauté for 6-8 minutes or until browned. Once the corn is browned, turn off heat and let it cool in the pan for 2-3 minutes.
In a medium bowl, mix Greek yogurt, lime zest & juice, garlic, and spices.
Add corn, poblano pepper, onion, cilantro, and cheese to the bowl. Mix thoroughly and taste for seasoning.
Serve warm with tortilla chips or on its own as a side.
