Cowboy Salsa


SERVES: 8-10


INGREDIENTS

  • (15 oz.) can black beans (1 ½ cups beans), drained and rinsed

  • 1 cup sweet corn

  • 3 cups tomatoes (Roma or cherry tomatoes), finely chopped

  • 1 large lime, juiced

  • 1 small Poblano pepper, finely chopped

  • 1 small onion, finely chopped

  • ¼ cup cilantro, finely chopped

  • 1 garlic clove, peeled and grated or minced

  • ½ tsp cumin

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 Tbsp olive oil


DIRECTIONS

  1. Prepare all ingredients and put them into a large bowl.

  2. Mix all ingredients together.

  3. Serve with tortilla chips.
