Caramelized Banana Compote


YIELDS 1 ¼ CUP

France


INGREDIENTS

  • 4 bananas, peeled and cut into ¼ inch slices

  • 1 Tbsp salted butter + 1 Tbsp canola oil

  • ¼ tsp nutmeg

  • 2 Tbsp brown sugar

  • ½ tsp vanilla extract

DIRECTIONS

  1. In a large skillet, melt the butter with the oil over medium heat and cook until foamy and just starting to brown.

  2. Add in banana and fry on one side 2 - 3 minutes until golden (shake pan occasionally but try not to Nash the fruit).

  3. Sprinkle with nutmeg and flip with a spatula and fry on other side.

  4. Sprinkle brown sugar over bananas and add vanilla. Shake and stir gently for 1- 2 minutes until sugar has dissolved. Again, try not to break up banana slices. Add 1 - 2 Tbsp water if it is too dry.

  5. Serve warm over pancakes, waffles, or ice cream.
